How To Prepare And Cook Your Beans:
- Trim the ends, cut into pieces as you like.
- Wash them in a vinegar and water solution, about five to Rinse them and leave a small hint of vinegar for flavor.
- They are best when steamed. Put them into a pan with a half cup of water.
- Bring to a boil and turn the heat down until just a little steam comes out.
- Steam for 5 minutes–or until they meet your likings.
These will keep for a week in the refrigerator.

Green beans are economic, easy to prepare:
- When possible, select crisp, tender fresh green beans.
- Cut them into pieces of your liking. Wash in a solution of vinegar and water (5-1).
- Put into a heavy pan (I like a Multi-layered bottom pan), there are several good pans on the market that don’t cost too much. Revere Ware, and Farberware can be found at some Wal-Mart stores. A good tight lid is preferable.
- Add your favorite seasonings: salt, olive oil, pepper–whatever you like.
- Put in a cup or less of water and place on high heat.
- As soon as steam comes out lower the heat until only a small amount of steam.
- Stir by shaking–if you are brave. Otherwise, stir them occasionally.
- I like mine to remain a little crisp–never soft or mushy.
- When all is done, there should be little, if any, liquid in the bottom–if there is, just drink it.
